Cantonese-style Chicken Soup

Serves 4

A bunch of coriander
Oil, for frying
1 egg
5g ginger, grated
Soy sauce, to taste
Spring onion, sliced
120g white fish fillet, sliced thickly
750ml water

For the Marinade:
1 tsp salt and pepper
¼ tsp cornstarch

In a bowl, marinate the fish for 15 minutes.
2. Slice the coriander, reserving the roots, and slice the egg into small pieces.
3. Bring the water to a boil then add the egg, coriander and reduce to a medium heat, cooking for around 10 minutes. Add the fish and the remaining ingredients. Serve hot.
