Cantaloupe Ice Cream Cones
600g ripe cantaloupe
1/3 cup sugar
A pinch of salt
2 tbsp lemon zest
2 tbsp lemon juice
1 Peel the melon and remove the seeds, make sure to remove any trace of green from the rind. 2 Cut into chunks and put into a blender. Purée in a blender with the sugar, salt and lime juice until smooth.
3 Add lemon zest and taste. Adjust with sugar and more lime juice depending on sweetness of the melon.
4 Chill the mixture well and then freeze according to the instructions for your ice cream maker. Serve in cones.
