Interaction and customisation is key at Spectrum on One’s Friday brunch. It boasts eight kitchens specialising in cuisines from India, Thailand, Japan, China, Europe and the Middle East, plus a cheese room and sweets. In every section, chefs will gladly make your individual dishes to your tastes, even if you don’t see a particular ingredient on display.
Chefs are constantly adding new elements to the brunch, the latest being the guacamole station where you can enjoy a live demonstration using the traditional mortar and pestle. We recommend ordering a bowl and tortilla chips to your table to snack on between courses.
Another new addition is chocolate brownie cakes – a great complement to the huge array of sweets, including freshly made crêpes plus lots of individually potted desserts. The sweet highlight was hot sticky toffee pudding covered in toffee sauce, which is so light and soft it melts in your mouth. We dare you to not be tempted by seconds.
Beverage-wise, make sure you check out the mojito section, and the Bloody Mary stand for the more daring imbiber. At your table you will be constantly topped up with French bubbly, and served coffees at the end to help you snap yourself out of the inevitable food slump. Leave diets at the door!
