2 avocados, peeled and cubed
2 tomato, cubed
1 small red onion, cubed
2 limes, juice and a bit of zest
A handful of coriander, chopped
Combine all the ingredients in a bowl, squeeze over the lime juice and season with salt and pepper. You can add some chopped red chilli or Tabasco sauce for a bit of heat. Leave the salsa covered in the fridge for 30 minutes to an hour before serving so that all the flavours can meld together.
