Head Chef Alessandro Salvatico was featured in the 10th edition of the Riso Gallo Guide for the best risotto in the world, so it’s no surprise that each meticulously executed dish is of similar stature. Attention to detail is prevalent here, with pasta hand-rolled and cooked to al dente perfection, while elegant edible creations such as the lacy black crisp on a classic burrata, adorning every plate.
Try the seabass. Encased and cooked in a salt crust to retain moisture, the fish is brought to the table and carved open in front of your eyes. Just try not to drool!
Even if you don’t have a sweet tooth, the La Sfera is a must-try. Resembling a Christmas bauble, this delicate creation is made from the finest spun sugar, which encases a creamy concoction within. The flavours vary by season, so depending on when you visit it may be chocolate, or fruit with cream. Either way, this is the type of dessert that deserves a standing ovation.
