Armani / Ristorante, ARMANI HOTEL, DUBAI
There’s a wonderful sense of space at Armani/Ristorante. Diners aren’t crammed onto scant tables; there’s room to breathe and an immediate sense of relaxation on arrival.
The soundtrack typically includes Frank Sinatra classics, and Georgio’s minimalist Armani/Casa furnishings in cream and beige are hard to date. You could easily imagine an episode of Mad Men being filmed in here, with the ad execs brokering deals over lunch.
The pasta is hand-rolled and al dente. Try the black-ink ravioli filled with langoustine, peas and tarragon – three plump ebony pillows of minced prawn secreted beneath vibrant green herbal foam that dissolves in the mouth.
Another dramatically atramentous dish is the veal tenderloin. It’s charcoal-smoked, which blackens it, giving it the appearance of coal, but it’s as soft as the watercress mash it’s served with and loaded with rich smoky flavour.
La Sfera (The Sphere) is a show-stopper dessert and a test of a chef’s patience. The flavour varies from chocolate to fruit themes. We tried the mango variety – sorbet, fruit and cream are encased in what looks like a Christmas tree bauble. The perfect globe is blown like glass from sugar and is so delicate that several are often broken in the process of creating one festive-looking dessert topped with real gold leaf.
