Stir-fried Chinese Noodles with Prawns
Fresh Chinese noodles
10ml peanut oil
6ml sesame oil
10g grated fresh ginger
10g garlic cloves, finely chopped
120ml soy sauce
100g red capsicum
120g fresh bean sprouts
160g fresh mushroom
100g spring onions
Crushed red chilli flakes (optional)
2g sea salt
2g white pepper
1. Fill a large pot ¾ full with water, add the noodles and bring to the boil for 10 minutes. Strain the noodles thoroughly and set aside.
2. In a large pot or frying pan, heat the oils over a medium heat. Add ginger and garlic and stir-fry until fragrant. Then add the prawns and sauté for 2 minutes.
3. Stir in the soy sauce and broccoli and continue to cook over a medium heat for about 3 minutes. Add the remaining vegetables and cooked noodles and toss until warmed through.
4. Season it with sea salt and white pepper and add the chopped spring onions at the end. Garnish with chilli flakes if you like a bit of heat.
