Recipe: Sushi Rice and Pumpkin Seed Salad
Smashing Pumpkin Seeds!

SUSHI RICE AND PUMPKIN SEED SALAD

SERVES 4

 

INGREDIENTS

400g sushi rice

2 cups water

2 small cucumbers peeled and thinly sliced

½ cup toasted pumpkin seeds

2 avocados peeled – 1 diced, 1 cut into 4

4 corn on the cobs, grilled

FOR THE DRESSING

4cm ginger, peeled and grated

2 tbsp mirin

1 tsp wasabi paste

1 tbsp soy sauce

60ml water

1 tbsp lime juice

60ml rice vinegar

 

METHOD

  1. Combine all the ingredients for the dressing in a bowl using a spoon.

  2. Wash the rice and cook, covered, for about 12 minutes. Leave the lit on and allow it to stand for about 10 minutes.

  3. Add the diced avocado, cucumber, dressing and pumpkin seeds.

  4. Put the rice into bowls. Garnish with avocado wedges and serve with grilled corn on the cob.
