Recipe: Strawberry and White Chocolate Pizza
FOR THE BASE
500g all-purpose flour, plus extra for dusting
250ml lukewarm water, plus extra if required
1 tsp dried active yeast
2 tbsp extra virgin olive oil
1 tbsp sugar
1 tsp salt
FOR THE SAUCE
4 tbsp strawberry jam
1 tsp strawberry extract
½ tsp lemon juice
FOR THE TOPPING
500g strawberries, hulled and halved
170g white chocolate buttons
¼ cup toasted sliced almonds
A few leaves of mint or basil to garnish (optional)
Icing sugar, to dust
1 Place the flour in a large bowl.
2 Add the yeast, sugar, salt and olive oil and mix to combine.
3 Add the water, little by little, kneading until you have a compact ball of dough.
4 Cover the bowl with clingfilm or a cloth and allow to rise between two to four hours in a warm place until doubled in size.
5 In the meantime, prepare the sauce by placing the jam in the microwave for 10 seconds until softened.
6 Whisk in the strawberry extract and lemon juice until smooth.
7 Add the strawberry halves and toss to combine. Set aside.
8 When the dough has risen, divide it into four equal parts. It should be elastic.
9 Preheat the oven to 240C.
10 Dust your work surface with flour and roll the bases into 23cm diameter circles.
11 Oil a pizza pan or baking tray and transfer the flattened dough on it.
12 Prick the bases with a fork several times.
13 Bake in the oven for nine minutes.
14 Allow the bases to cool slightly before spreading evenly with the sauce, white chocolate buttons and a scattering of toasted almonds (the base should still be warm so that chocolate melts slightly).
15 Chill for 30 minutes.
16 Garnish with mint or basil leaves and a dusting of icing sugar before serving.
