Recipe: Salmon Rillette

Recipe: Salmon Rillette

SERVES 4

Ingredients
1 clove garlic, sliced
A handful of thyme
1 unwaxed lemon, juiced, and zest grated
200g salmon fillet, with skin
200g smoked salmon, chopped
1 spring onion, sliced
1 tbsp fresh dill, chopped
2 tbsp soft butter
50g crème fraîche

METHOD
1 Combine the garlic, thyme and lemon zest in a bowl.
2 Transfer half of the mixture to a steamer.
3 Place the salmon fillet on top, season with salt and ground black pepper and cover with the remaining thyme mixture.
4 Cover with a lid and steam for 8-10 minutes.
5 Mix together the smoked salmon, spring onion and the dill and add a little of the lemon juice.
6 Leave the steamed fish to cool, remove the skin and flake the meat.
7 Mix with the butter and crème fraîche until creamy and fold in the smoked salmon mixture.
8 Season to taste and arrange on plates with the help of serving rings.
