Japanese flavours come together in a healthy plate

Recipe: Saladicious Sashimi Salad

SERVES 1

INGREDIENTS
150g fresh salmon sashimi
1 tsp mayonnaise
2 tbsp orange dressing
3 tbsp avocado, cut into small pieces
60g Asian mixed lettuce
1 tbsp sesame seeds
2 tsp soy reduction
FOR THE ORANGE DRESSING
¼ cup orange juice
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
2 tsp honey
1/8 tsp cracked black pepper
FOR THE SOY REDUCTION
¼ tbsp light soy sauce
½ tsp ginger paste
½ tsp garlic paste
2 tsp sugar
2 tbsp rice vinegar
Salt and pepper, to taste.

METHOD
1 Make the orange dressing by combining the orange juice, vinegar, mustard, honey and pepper in a small jar with a tight-fitting cover. Cover and shake well until combined. Set aside and shake well before serving.
2 Make the soy reduction by setting all the ingredients in a small saucepan, heat and reduce until syrupy. Drizzle through a sieve and set aside.
3 Arrange the salmon slices so that they frame the plate.
4 Mix the lettuce with the orange dressing and place in the centre.
5 Add drops of mayonnaise to the salmon sashimi.
6 Scatter the avocado on top of the lettuce.
7 Sprinkle with sesame seeds and drizzle with the soy reduction, to serve.
