RECIPE: Pumpkin Pancakes

RECIPE: Pumpkin Pancakes
Revamp your pancakes with pumpkin purée

SERVES 4
INGREDIENTS
1¼ cups all-purpose flour
2 tbsp sugar
2 tsp baking powder
½ tsp cinnamon powder
½ tsp ginger powder
½ tsp grated nutmeg
½ tsp salt
A pinch ground clove
1 cup low-fat milk
6 tbsp canned or fresh pumpkin purée
2 tbsp melted butter
1 egg
½ cup thick yoghurt
½ cup buttermilk

METHOD
1. Whisk the flour, sugar, baking powder, spices and salt in a bowl.
2. In a separate bowl, whisk together the milk, pumpkin, melted butter and egg. Fold the wet mixture into the dry ingredients.
3. Spray or grease a skillet and place it on a medium heat. Pour in about ¼ cup batter for each pancake. Cook the pancakes for about 3 minutes on each side.
4. Combine the yoghurt and buttermilk and serve with the pancakes.
