Recipe: Orange Cheesecake Cookies
½ cup butter, at room temperature
85g cream cheese
1 cup sugar
1 tsp vanilla essence
1 tbsp orange zest
1 cup all-purpose flour
FOR THE CREAM CHEESE ICING
85g cream cheese, softened
1 ½ tbsp butter, at room temperature
6 tbsp icing sugar
Orange zest, to garnish
1 Heat oven to 180C and grease two mini muffin tins.
2 Cream the butter and cream cheese until well combined.
3 Add the sugar, vanilla essence and zest and blend until the ingredients are well combined. Do not overmix. Fold in the flour and mix until incorporated.
4 Fill each muffin cup about ¾ full with cookie dough.
5 Bake for 10 to 15 minutes or until a skewer poked in the centre comes out with moist crumbs attached.
6 Make a dent in the centre of the cookies using a spoon or your finger while still warm, to make a shallow cup.
7 Allow to cool slightly, then transfer the tins to the refrigerator and chill for 30 to 60 minutes until completely cold. Remove the cookies from the muffin tins.
8 Place the butter and cream cheese in a bowl and cream together until combined.
9 Add the icing sugar and beat until light and fluffy.
10 Pipe or spoon the icing into the cookie cups and garnish with orange zest if desired. Place into the fridge until ready to serve.
