Recipe: Honey-Glazed Parsnips
800g parsnips, peeled and cut into bite-sized pieces
2 tbsp vegetable oil
2 tbsp butter
2 tbsp honey
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
1 tbsp chives, chopped
1 Heat the oven to 200C.
2 Place the parsnips on a baking tray and mix with the oil.
3 Season with salt and roast for around 20 minutes until almost done. Turn once.
4 To make the glaze, place the butter, honey and lemon juice in a saucepan set over a medium heat.
5 Brush onto the parsnips and roast at 240C until golden.
6 Serve garnished with the parsley and chives.
