RECIPE: Cod with Orange, Avocado and Jalapeno Salsa
2 navel oranges
¼ small red onion, peeled and finely diced
1 jalapeno pepper, seeded and chopped
1 lime, juiced
2 tsp olive oil
2 fillets of cod (about 200g each)
1 Using a sharp knife, slice your oranges over a bowl, so as to catch any juice. Set aside.
2 Combine the onions, jalapeno and lime juice with the orange juice.
3 Season with salt
4 Using a non-stick frying pan over a high heat, heat the olive oil for 30 seconds.
5 Add the cod fillets and allow to cook for five minutes on each side. Set aside.
6 In the meantime, halve and pit the avocado.
7 Score cubes into the avocado halves with a sharp knife.
8 Scoop out the avocado cubes with a spoon and gently toss with the orange mixture.
9 Spoon the orange mixture over the fish. Serve hot.
