Recipe: Cherry Cola and Jalapeno Meatballs

Recipe: Cherry Cola and Jalapeno Meatballs

INGREDIENTS

FOR THE MEATBALLS

500g beef mince

1 large egg

½ cup breadcrumbs

1½ tsp salt

1½ tsp sweet paprika powder

½ tsp onion powder

1 tsp black pepper

½ tsp ground nutmeg

1 tsp brown sugar

¼ tsp garlic powder

1 tsp dried parsley

A pinch of cayenne pepper

FOR THE GLAZE

½ cup brown sugar

½ cup cherry coke

3 jalapeños, sliced

TO GARNISH

Feta cheese, crumbled

A few rocket leaves

METHOD

1 Preheat the oven to 200C and line a baking sheet with parchment.

2 Mix all of the ingredients for the meatballs together with the mince, until well combined.

3 Using a medium-sized ice cream scoop, make evenly sized meatballs from the mixture, and place on the baking sheet.

4 Place the meatballs in the oven for 15 minutes.

5 In the meantime, make the glaze by combining the sugar with the jalapeños in a heavy-bottomed saucepan set over a medium-high heat.

6 Add ½ cup of the cherry cola and bring to the boil, for about seven to 10 minutes. Remove from the heat and set aside.

7 Flip the meatballs and return to the oven for another 10 minutes. 

8 Remove the meatballs from the oven, brush with the glaze and then return to the oven for a final five minutes. 

9 Crumble a little feta cheese on top and garnish with rocket leaves. Serve hot.
