Recipe: Breakfast Nachos

Just add eggs to make this a legitimate breakfast dish

Recipe: Breakfast Nachos

SERVES 2-3
 

INGREDIENTS
5 mini flour tortillas
Spray oil
Salt and pepper, to taste
50g cheddar cheese, grated
1 large tomato, diced
150g cooked black beans
3 tbsp your favourite hot chilli sauce
2 eggs
1 avocado

METHOD
1 Cut the mini tortillas into 8 triangles and lay in a single layer on a baking tray.
2 Spray them lightly with oil, and add a pinch of salt and pepper.
3 Place under a medium grill for a couple of minutes, until golden brown.
4 Flip each tortilla chip over and repeat with the other side.
5 When the tortilla chips are ready, layer them up on a baking tray covered with baking parchment with the cheese, tomato, black beans and hot sauce.
6 Return the nachos to the grill set over a medium-low heat, so that the cheese melts all the way through.
7 Meanwhile, dice the avocado.
8 Fry your eggs to your preference.
9 When the nachos are hot and crispy, top with the fried eggs and diced avocado.
10 Serve immediately.
