Recipe: Basic Bread Dough
MAKES 1 LARGE LOAF
680g white bread flour
1 tbsp salt
7g instant dried yeast
2 tsp sugar
430ml lukewarm water
1 Sift the flour, salt, yeast and sugar in a large mixing bowl.
2 Make a well in the centre of the mixture and pour in the water. Stir the flour in from the sides of the well until the mixture forms a ball.
3 Place on a lightly floured surface and knead for 10 minutes until the dough is smooth and elastic. Alternatively, use the dough hook on a food processor to knead the dough at a slow speed for 10 minutes.
4 Roll the dough into a ball and place in a lightly oiled glass bowl.
5 Cover with a damp dishcloth and set aside in a warm place to rise until it has doubled in size.
6 Knead the dough again lightly, then place in a greased baking tin. Leave to rise again until it has doubled in size.
7 Preheat the oven to 220C.
8 Bake in the oven for 15 minutes, then reduce the temperature to 190C and bake for a further 20 to 25 minutes until cooked through.
9 Remove from the oven and cool on a wire rack. (It should sound hollow when you tap the bottom of the loaf).
