How to Make Salsa from Scratch
Grill the tomatillos, chillies, garlic and onion until blackened and soft.
In a stone mortar, pound the garlic, onion and chillies with the pestle until mashed completely and combined into a paste.
Add the tomatillos and do the same, until everything is mashed and well-combined. Add sea salt and black pepper to taste.
Add the lime juice and garnish with a whole chilli and fresh coriander leaves.
The salsa is ready to eat with warm corn tortillas or corn chips.
