Looking to wow someone visiting you in the UAE? We doubt there is anything more impressive than a trip up the world’s tallest building for dinner. At.mosphere, located on the 122nd floor of the Burj Khalifa, recently introduced its summer menu and invited us to try the seven-course degustation menu with grape pairings.

We begin with an amuse bouche of fresh salmon in a light gazpacho to awaken our palate. Course numero uno is belly tuna with a light scoop of avocado ice cream, citrusy bergamot gel, fennel ribbons with a liquorice and olive crumble. Yum.

The second course features two types of foie gras (one ice cream, one covered in 100 percent cacao) with cherry jelly, salted pistachio crumbs and Szechuan powder. The combination of bitter chocolate and sweet cherry balances the foie gras’ fattiness. Our third dish is panseared scallops with goose bacon, pea purée and malted ice cream. The attention to detail is astounding, we feel like we are on a MasterChef grand final every time a new dish arrives. Each course is presented on crockery designed to complement the meal.

Fourth course is a slow-cooked egg in warm asparagus mousse topped with shavings of asparagus. The egg is the strangest, softest texture and tastes luxurious in a way we never thought an egg ever could.

Fifth course, and first of the mains, is fillet of seabass atop a bed of salty sea asparagus and a clam with clam foam.

Our second main dish and sixth course is a big winner. We demolish the juicy round of beef tenderloin drizzled in veal jus and the braised oxtail topped with watercress, dipping meat into baby leek ash with a balsamic reduction before nibbling on a mini stack of dauphinoise potatoes.

Dessert is creamy malt cream, cracked chocolate with kumquat marmalade and deliciously savoury tonka ice cream.

Perfect for food fans or budding foodies, the combination of quirky flavours in each dish work beautifully together. It’s a true food experience set up high in the clouds above Dubai with the most attentive and friendly service team.
