Recipe: Brie Sliders with Caramelised Onions
FOR THE ONIONS
2 tsp olive oil
1 large white or brown onion, sliced
½ cup ginger ale
FOR THE SLIDERS
6 slider buns
6 grilled slider patties
1 Heat the olive oil in a large pan set over a medium-high heat.
2 Add the onions to the pan, reduce the heat to medium, and allow to cook, stirring occasionally. If the onions get too dry before completely browning, add a couple tablespoons of water.
3 When the onions have browned to your liking, add the ginger ale and allow to simmer until the ginger ale reduces to a nice, syrupy glaze for the onions.
4 To build the sliders, spread the apricot preserve onto the buns and top with a burger patty, slices of brie and some onions.
