If you haven't done brunch at The Fairmont's Spectrum on One yet,... there's probably never been a better time to splash out! Now in its fourth year, the culinary geniuses at The Fairmont Dubai are getting everyone excited, with the promise of two more top class, dedicated gourmet delicatessen rooms! And that's not all! As of January 11th 2008, one of Dubai's fave brunches will also feature more live cooking stations and an extensive range of international drinks and cocktails. Should go pretty well alongside the unlimited pourings of Möet & Chandon. Hurrah!

Forget Christmas - there's only one date on our food-scoffing calendars worth mentioning!

On Friday, January 11, 2008, Spectrum on One will usher in internationally renowned Chef Pascal Tinguad, for an exclusive one-brunch-only affair - sssssh! The culinary ambassador of the Möet & Chandon Champagne house and 3-star Michelin chef will provide Friday brunch enthusiasts with a rare glimpse into the exquisite world of food and Champagne pairings. Posh Nosh? You'd better believe it.

Recognised by the 2007 Time Out Restaurant awards for ‘Highly Commendable Friday Brunch', Spectrum on One's eight interactive kitchens, featuring six influential cuisines will extend its journey to include a tantalising array of Middle Eastern specialties - live ‘shawarma' cooking station... juicy Arabic grills, and a vibrant Thai style market, offering all the gorgeously fresh ingredients you need to create the perfect curry.

And as for those culinary rooms? Here's one for the cheese freaks! The first room will be packed full of international cheeses, freshly baked breads, and traditional condiments, complemented with fortified wines hailing from the Old World. Blimey! The second room will apparently be reminiscent of a French charcuterie, and will showcase a range of gourmet deli items from saucisson sec (dried sausage), Italian prosciutto and homemade terrines, to pâté delicacies.
If all that's not enough to make your mouth water, Spectrum on One will be tossing in a mix of new spirits, premium global vintages and signature libations, all prepared by Fairmont savvy mixologists.

And if you're really planning to stick to all the diet talk - a new mocktail menu will feature fresh juices, healthy smoothies and classic favourites such as the ‘Shirly Temple' and the ‘Virgin Pina Colada'. (pah!)
