Exchange Grill goes German

In March, The Fairmont Dubai swings open its kitchen doors to Michelin star Chef, Christoph Rueffer, of Haerlin Restaurant at the Fairmont Hotel Vier Jahreszeiten in Germany. He'll be cooking up a special kind of storm in old fave, Exchange Grill.

From 26 to 28 March 2008, the culinary mastermind behind the internationally renowned restaurant will be rustling up an exquisite menu for this limited stay. You'll be treated to a uniquely designed five course degustation menu, reflective of Chef Rueffer's 'haute cuisine' culinary style. Highlights include quail breast and leg served in the 'à la francaise' style; tarragon crusted rack of lamb with aubergine puree and salsa verde; and spiced coffee mousse with mango papaya tartar and raspberries. Not only is this Chef good, folks... he's REALLY good. The influential French dining guide Gault Millau, which rates European restaurants on a scale of 1 to 20, awarded Haerlin Restaurant with an impressive 17 points, and described its chef de cuisine as "having that special touch for everything, which makes his dishes flavoursome and pleasant to the palate." The critics of the dining guide also added that "Chef Rueffer's menus are composed in concert with the Hamburg luxury restaurants and are high on the contemporary scale."
